A tempting menu by Andrew Salter
Born in Sidmouth, Horizon Restaurant’s head chef Andrew Salter has an extensive repertoire in the food industry, having worked at numerous luxury hotels across the UK before working at The Belmont Hotel. He now leads a team of 10 chefs and specialises in British, French and Mediterranean cuisine, all of which has influenced the menu at Horizon. Andrew’s menu focuses on local, seasonal and sustainable produce, creating a wonderfully fresh menu full of tempting dishes. Feast on pan seared scallops with crispy pancetta, samphire grass and sweet chilli & basil oil, or a prime 8oz West Country fillet steak with red wine reduction and forest mushrooms. Vegetarians and vegans are well catered for, with a delicious baked vegetable caponata, casseroula with lentils, beans and grilled polenta and homemade pastas to choose from.
